1/2 c. cracked wheat (fine bulgur) 2 bunches parsley (leaves only) 2 tsp. dried mint, crushed 1/2 c. olive oil Juice of 3lmons Salt, allspice to taste 2 heads Romaine lettuce 3 med. tomatoes, diced Lettuce for serving Chop green vegetables fine. Rinse cracked wheat then squeeze excess water by pressing between palms, mix with chopped vegetables. Add remaining ingredients, adding more seasoning if necessary. Toss lightly. Serve on a bed of crisp green lettuce. Garnish with diced tomatoes. Serves 4-6. |
