SAUERKRAUT SALAD 
1 can sauerkraut
2 qt. water
1 c. celery, chopped
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 c. sugar
1/2 c. vinegar
1/2 c. salad oil

Boil water and kraut together for 15 minutes; drain. Set aside or run cold water over kraut until cool. Combine celery, onion, and green pepper. Mix with cooled kraut. Heat sugar and vinegar in oil until sugar is dissolved. Pour over kraut mixture. Chill and serve. Yields 8 servings. Add grated carrot or chopped pimento for color.
