TONJIRU 
4 oz. boneless pork, sliced
1/2 carrot, sliced
2 tsp. grated ginger root
1/4 c. Miso
1 Gobo root (burdock)
2 scallions, sliced
1 qt. soup stock
1/2 tsp. salt

Peel Gobo root and slice into 1 inch strips. Heat soup stock and when it comes to boil, add pork, Gobo, carrot and grated ginger root. Cook over medium heat for 5 minutes. Add Miso and salt, stirring constantly until Miso is dissolved. Add scallions before serving. Makes 4 servings.
