CARROT CAKE 
1 c. corn oil
2 c. sugar
4 eggs
1 tsp. baking soda
1 tsp. salt
2 c. plain flour
1 tsp. cinnamon
1 tsp. vanilla
2 c. carrots
1/2 c. buttermilk

Grate carrots; soak in buttermilk. Mix all other ingredients then add carrot/buttermilk mixture. Pour into greased cake pan. Bake 350 degrees.

FROSTING:

2 cream cheese
1 box XX confectioners sugar
1 tsp. vanilla

Frost. Eat hot or cold.
