BAKED BEANS | |
2 lb. (bag) Navy pea beans Salt and pepper 2 c. granulated sugar 2 tsp. dry mustard 1/2 lb. salt pork (meat) 1 lg. onion (may leave out) Baking soda Wash and soak the beans overnight, allowing plenty of water for them to swell. Parboil using the baking soda times two until the skins wrinkle. Drain the beans and place in bean pot or 6-quart pot. Cut the pork in half and slash each piece several times almost through. Bury the pork and sliced onion in the beans. Mix the dry mustard, salt, pepper, and sugar with enough boiling water to cover the beans slightly. Bake covered in 300 degree oven 6-8 hours, adding more water as needed. |
