SCALLOPS EN CASSEROLE 
1 lb. scallops
butter
Light cream
Ritz crackers (use lightly salted)

Wash scallops and place in a baking dish. Crumb 1/2 chute of Ritz crackers; brown cracker crumbs in a generous amount of butter. Pour cracker crumbs over scallops and dribble light cream over both. Bake at 350 degrees for about 20 minutes. Serves 2-3.
