SPANISH RICE 
1 lg. can tomato juice
2 lg. onions, diced
1 1/4 c. rice
2 tsp. salt
1 tsp. pepper
1 tsp. chili powder
1 lb. bacon, diced

Heat tomato juice to boiling. Add onion, salt, pepper, chili powder and rice. Turn heat to low to simmer. Stir frequently to prevent rice from sticking. Fry bacon crisp.

Add to tomato-rice mixture with 1/4 cup bacon grease. Cook for 1 hour or until rice is done.
