FRESH FRIED CORN 
10 ears fresh corn or enough for 2 c.
1/2 c. skim milk
1 tsp. salt
1/8 tsp. pepper
1 tbsp. butter

Combine corn, milk, egg yolk, salt, butter, vanilla and sugar in medium mixing bowl; stir well. Beat egg white until stiff but not dry; fold into corn mixture. Spoon into nonstick 8- inch square baking disk, and bake at 350°F for 30 to 40 minutes or until set. Serve and enjoy.
