1 c. cooked mashed sweet potatoes
1/2 c. soy milk
1/3 c. melted soy or safflower butter
2 beaten eggs
1 tsp. ground nutmeg
1/2 tsp. baking powder
1/2 c. honey
1 unbaked pie shell

Combine sweet potatoes with all ingredients except pie shell, blending well with electric mixer. Pour into pie shell. Bake in 400 degree oven for about 30 minutes or until golden and puffy.
