FINNISH PANCAKES 
2 lg. eggs
1 c. all purpose flour
1/2 of 1/4 stick of butter (cut in 4 equal parts)
2 c. milk
1/2 tsp. salt

In an electric blender, blend until smooth the eggs, milk, flour and salt. Leave in blender. Distribute butter over the bottom of a 9 x 13 pan. Preheat oven to 400 degrees, melt butter in pan and add butter to batter and blend. Return pan to preheated oven until sizzling hot. Pour batter into hot pan. Bake at 400 degrees until brown and crusty on top. Serve at once with cinnamon and sugar. Makes 4 to 6 servings.
