RICE, BEEF AND OKRA 
2 1/2 c. cooked rice
2/3 c. sliced onions
1 lb. ground beef
1 lg. can tomatoes
1 c. coarsely diced green pepper
1 lb. frozen okra, cut in lg. chunks

Drain juice from tomatoes when boiling in saucepan. Add 1/2 teaspoon salt, okra and green pepper, cook until tender, add tomatoes, set aside. Saute onions in large saucepan. Remove and add enough oil to brown beef. Stir frequently, then moisten well with hot water. Top with rice and combine rest of ingredients. If mixture is too dry, add more tomatoes, juice or consomme. May be prepared a day in advance, as it keeps well in refrigerator.
