THE BEST SPAGHETTI SAUCE 
3 cloves crushed garlic, more or less to taste

Saute in large pot on medium heat.

Add:

3 med. onions, diced
3 med. carrots, diced
1 med. stalk celery, chopped
1 can (24 oz.) plum tomatoes
1 can (15 oz.) tomato sauce
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. fresh minced parsley
1 tsp. dried red pepper flakes
1/2 tsp. salt
1 tsp. crushed black pepper
1 1/2 c. red wine
1 c. fresh Parmesan cheese

Blend all ingredients. As you add bring things to a boil. Simmer 45 minutes uncovered, then simmer 45 minutes covered, stirring occasionally. 1/2 to 1 cup water may be added. Do not let the sauce get too thick.
