GAZPACHO 
6 c. ripe tomatoes, peeled & chopped or canned plum tomatoes
1 onion, roughly chopped
1/2 c. green pepper, chunks
1/2 c. cucumber chunks
2 c. tomato juice
1 garlic clove, minced
1 tbsp. salt
pepper
1/4 c. olive oil
1/4 c. wine vinegar
1/2 c. onion, finely chopped
1/2 c. green pepper, finely chopped
1/2 c. cucumber, finely chopped
1 c. tomato, finely chopped
garlic croutons
feta cheese, crumbled

In blender, puree tomatoes, onion, green pepper and cucumber. Add tomato juice, garlic, salt and pepper. Cover and chill well. Before serving, add oil and vinegar. Serve accompanied by side dishes of tomatoes, onion, green pepper, croutons and Feta cheese.
