DIRTY RICE 
2 lb. long grain rice
2 lb. lean ground beef
2 lb. lean ground pork
1 lb. ground giblets
1 c. yellow onions, diced
1 c. green onions, diced
1/2 c. bell peppers, diced
1/4 c. ground garlic
Salt
1/4 c. parsley, cut up
4 bay leaves
1 tsp. black pepper
2 cans cream of mushroom soup
2 c. celery, diced
3 lb. Lea & Perrins
1/2 lb. butter

With about 2 cups water, mix all meats together in a heavy pot, on a medium hot burner. Add all the above seasonings except soup at the start of cooking. Cook on medium stirring often until everything is very tender. Then stir in soup and simmer for about 30 minutes. Boil 2 pounds rice. Let rice cook completely. After it has cooked, mix with meat mixture. Allow to steam or cook on low for about 30 minutes before serving. Serves 10.
