SKILLET SPANISH RICE 
1/4 c. cooking oil
1 med. onion, diced
1/2 med. green pepper, diced
1 c. raw rice
1/2 lb. ground meat
2 (8 oz.) cans tomato sauce
1 3/4 c. hot water
1 tsp. prepared mustard
1 tsp. salt
Dash of pepper

Heat oil in skillet. Add onion, green pepper, rice, and beef. Stir over high heat until lightly browned. Add tomato sauce and remaining ingredients. Mix well. Bring quickly to a boil. Cover tightly and simmer for 25 minutes. (Meat may be omitted.) One-half cup grated cheese may be added just before serving. Serves 4.
