CURRY CHICKEN 
2 tbsp. vegetable oil
1 lb. boned and skinless chicken pieces
1 lg. onion, chopped
2 lg. tomatoes, chopped
2 tbsp. soy sauce
1/4 c. water
1/8 tsp. pepper
1 tbsp. parsley flakes
1 clove garlic, minced
4 tsp. curry powder

Heat oil in a large skillet over medium heat. Add chicken and brown lightly on all sides, turning frequently. Reduce heat to low. Add remaining ingredients, mixing well. Cover and cook 1 hour, stirring occasionally. Add small amounts of water, if necessary, to prevent drying.
