JIFFY REUBEN CASSEROLE 
2 (16 oz.) cans sauerkraut, drained
1/2 c. chopped onions
1/4 to 1/2 c. chopped dried parsley
2 tsp. caraway seed
4 c. shredded Swiss cheese
1 2/3 c. Thousand Island dressing
2 (10 oz.) cans kosher corned beef, sliced or 1 lb. deli-style, sliced
8-10 slices cubed rye bread
1/2 c. melted butter

Mix drained sauerkraut, onions, parsley, and caraway seeds together. Place in bottom of buttered 9x13 inch glass dish or pan. Top with 2 cups cheese, 1/2 of Thousand Island dressing and all of the sliced corned beef. Top with remainder of cheese and dressing. Toss rye bread cubes with melted butter. Bake at 375 degrees for 35-45 minutes until heated and cheese melts. Can be made ahead.
