RICOTTA PIE 
SHELL:

4 eggs
1/2 c. shortening
1 c. sugar
4 c. flour
4 tsp. baking powder
3 tsp. vanilla
1/4 c. milk

Mix ingredients well and line a greased cookie sheet (large, rectangular with one inch sides), reserving some for a lattice crust.

FILLING:

3 lb. Ricotta cheese
Powdered sugar to taste
Vanilla extract to taste
4 eggs

Beat well with mixer and fill the lined pan. Add the lattice crust. Bake at 350 degrees for about 30 minutes.
