MONKEY BARS 
1/4 c. flour
1 c. brown sugar, packed
1/2 c. softened butter
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
1 egg
1 c. quick oats
1/2 c. peanut butter
1/2 c. coconut (optional)
1/2 c. chocolate chips
1/2 c. nuts or sunflower seeds

Combine flour, sugar, butter, salt, soda, vanilla and egg. Beat at medium speed for 1 to 2 minutes. Add oats, peanut butter and coconut. Spread dough in a greased 9 x 13-inch pan with hands. Sprinkle top with chocolate chips and nuts.

Bake 15 to 20 minutes in preheated 375°F oven or until edges are golden and center stays soft. Cut into 24 bars.
