BAKED DEVILED ORANGE ROUGHY 
1 to 2 lb. fresh or frozen Orange Roughy or other white fish fillets, 1/2 inch thick
1 (8 oz.) pkg. cream cheese
2 tbsp. mayonnaise or salad dressing
2 tbsp. milk
1 tbsp. dry onion soup mix
1 tbsp. lemon juice
1 tsp. dried tarragon, crushed
1 tsp. Dijon style mustard
1 1/2 c. soft wheat bread crumbs
1 c. snipped parsley
1/2 c. grated Parmesan cheese
1 tsp. paprika

Thaw fish, if frozen. Cut fillets into 6 serving size pieces. Arrange fillets in single layer in greased baking dish. In small bowl combine cream cheese, mayonnaise, milk, onion soup mix, lemon juice, tarragon and mustard. Mixture may be lumpy. Spread mixture over fish. Bake at 450 degrees for 10-12 minutes or until fish almost flakes with fork. Combine bread crumbs, parsley, Parmesan cheese, and paprika. Sprinkle on top of fillets. Bake 3-4 minutes longer until crumbs are golden and fish flakes easily with fork. Serves 6.

This is a delicious fish recipe! The onion soup makes the dish. Since I don't care for tarragon. I left it out. I also put the fish under the broiler until the crumbs browned. I think this could be a great fish dish for company, too.

Awesome recipe! We made it last night it was quick and easy my daughter put together the spread and we popped it in the oven dinner was on the table in 25 minutes! I also placed it under the broiler to brown up. I also would add some butter or the leftover spread, to the crumbs to make them stick better as they were really loose on top. Everyone cleaned their plates! Great recipe!!!
