LIGHT TURKEY SAUSAGE PIE 
1 (9") pie crust, thawed if frozen
7 oz. hot flavored Italian turkey sausage
1 c. chopped onion
1 c. frozen chopped broccoli, thawed
1 c. evaporated skim milk
3/4 c. egg substitute
4 oz. part skim Mozzarella cheese, shredded
1/2 tsp. salt
Pinch ground red pepper
1 tsp. grated Parmesan cheese

1. Preheat oven to 350 degrees. With fork, prick bottom and sides of pie crust; set aside.

2. In large skillet, over medium high heat, cook sausage 2 to 3 minutes, breaking up pieces with back of wooden spoon. Add onions; cook 4 to 5 minutes until soft.

3. Place sausage and onions in pie crust, place broccoli on top of sausage. In medium bowl, combine evaporated skimmed milk, egg substitute, Mozzarella cheese, salt and red pepper. Pour into crust. Sprinkle Parmesan cheese on top of filling.

4. Bake 40 to 45 minutes or until filling is set and top is browned. Cool on rack 10 minutes before serving. Makes 8 servings. 241 calories per serving.
