“SWEET POTATO WAFFLES” IS IN:

SWEET POTATO WAFFLES 
1/2 cup cooked, mashed sweet potatoes
3 eggs
4 tablespoons butter
2 tablespoons sugar (or maple sugar)
1 cup flour (white or whole wheat)
2 tsp. baking powder
1/2 tsp. salt
pinch of nutmeg or mace
1/2 tsp. cinnamon
1/4 cup orange juice
2/3 cup milk
few drops vanilla

Process all ingredients except flour in a food processor or blender until smooth; about 1/2 minute. Add flour and process for 10 seconds.

Note: You can skip the mashing step for the potatoes if using a food processor, but the measurement will be different. Use about 3/4 cup instead of 1/2 cup of cooked sweet potatoes cut into 1 inch cubes.

The batter should have the consistency of thick cream; thin with milk if necessary. Batter will thicken upon standing.

Bake in a well-seasoned hot waffle iron according to directions for your waffler. An average 7 inch classic waffle takes about 5 minutes to bake.

Serve topped with sliced bananas and drizzled with maple syrup, if desired.
