SPINACH BALLS | |
2 (10 oz.) pkgs. frozen chopped spinach 2 c. seasoned bread crumbs 1 c. Parmesan cheese 1/4 tsp. nutmeg 4 eggs, slightly beaten 1/2 c. soft butter 1 tsp. pepper Cook spinach; drain, squeeze out excess water. Mix all ingredients and shape into 1 inch balls. Place on cookie sheet and freeze for 1 hour. Bake at 375 degrees for 10 minutes. Makes 42 balls. |
