CORN CASSEROLE 
1 can cream style corn
1 can whole kernel corn
1 c. cooked rice (optional)
2 tbsp. pimento
1 chopped bell pepper
1 lg. onion, chopped
1 can Rotel tomatoes with chiles
2 eggs
1 1/2 c. sharp Cheddar cheese, grated

Combine all ingredients except cheese. Bake covered for 30 minutes. Uncover, top with cheese and cook another 5 minutes or until cheese is bubbly.
