ENCHILADA CASSEROLE 
1 lb. ground beef
1 pkg. flour tortillas
1 sm. can enchilada sauce
1 sm. can chopped black olives
2 c. shredded Cheddar cheese
1 sm. onion

Brown ground beef and onions; drain off fat. Mix in can of olives with meat; set aside.

Mix enchilada sauce and tomato sauce together and set aside.

Put tortillas in bottom of casserole bowl, sprinkle meat over this, sparingly, pour sauce over this and start over layering tortillas, meat, sauce and cheese until you run out ending with cheese on top. Bake at 350 degrees for about 20-30 minutes or until it bubbles. For larger casserole, double the recipe.
