DIABETIC COOKIES 
2 c. unsweetened applesauce
1/2 c. shortening
1/2 c. Sprinkle Sweet (Pillsbury)
2 eggs, beaten
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. raisins
1 c. instant oats
1/2 c. chopped nuts
1 1/4 c. flour
1 tsp. cinnamon
1/2 tsp. nutmeg

Mix all ingredients together until smooth. Drop by teaspoon on lightly greased cookie sheet.

Bake at 350°F until light brown, about 15 to 20 minutes.
