ENGLISH MUFFINS 
3 tbsp. butter
1/4 c. warm water
1 1/4 tsp. salt
2 tbsp. sugar
1 egg
1 c. milk (scalded)
1 tbsp. yeast
1 c. whole wheat flour
3 c. white flour
Raisins (optional)
Corn meal

Add butter, water, salt and sugar to scalded milk. Cool to lukewarm. Add yeast, egg, wheat flour and 1 cup white flour to milk. Blend well then add remaining flour until firm.

Let rise to double. Roll out to 1/4 inch thick on floured board. Cut 4 inch circles. Let rise until double in size. Sprinkle with corn meal before cooking. Cook slowly in ungreased frying pan, medium heat, 7 minutes on each side.
