CORNMEAL GEMS 
1 c. cornmeal
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar (good 1/4 c.)

1 egg
1 c. milk
1/2 c. melted butter or oil (or a bit more)

I use a shaker jar (or pint jar) and shake it good. Then pour into dry ingredients and mix well with spoon. Pour in muffin pans and bake at 350 degrees about 30 minutes or until nice and brown. Oh, yes, don't forget to grease those muffin pans.
