COTTAGE CHEESE PANCAKES 
1/2 c. pancake mix
1 c. sm. curd 2% cottage cheese
1 egg or egg substitute or egg whites

In lightly greased non-stick skillet drop heaping tablespoons of batter about 1/4 inch thick. Bake pancakes at 275 to 300 degrees until lightly browned. Turn, brown other side 2 to 3 minutes.

For larger serving, place in oven for up to 2 hours before serving. Will not dry out.
