SALT RISING BREAD 
1 med. potato
1 tbsp. sugar
1 tbsp. salt
2 tbsp. cornmeal
1 qt. boiling water
1 c. scalded milk
Flour
1 pt. warm water
1/2 c. shortening

Peel potato, cut into thin slices. Add 1 tablespoon sugar, 1 tablespoon salt and cornmeal to boiling water in saucepan. Stir in potato slices. Let stand in warm place overnight or until fermented. Remove potato slices. Pour scalded milk into potato water. Stir in enough flour to make soft dough, beat well. Let stand in warm place until light. Add warm water, 1/2 cup sugar, shortening, 1 teaspoon salt and enough flour to make workable dough. Knead on floured surface for about 10 minutes.

Shape into loaves, place in greased loaf pans. Let rise until almost doubled in bulk. Bake in preheated 350 degree oven for about 45 minutes or until golden brown.
