COUNTRY SAUSAGE PIE 
1 lb. hot reg. or Italian bulk sausage
1 onion, chopped
2 cloves garlic, minced
1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
1/4 tsp. oregano
5 eggs, beaten
1/2 c. grainy mustard
Pastry for 9 inch double crust pie
1/4 c. Parmesan cheese

In large skillet over medium heat, cook sausage, onion, and garlic until sausage is done. Drain well. Place in a large mixing bowl with spinach, oregano, eggs, and mustard. Stir until thoroughly mixed. Pour into a pastry lined pie pan. Sprinkle with Parmesan cheese. Top with pastry. Seal edges and cut vents in top. Bake at 400 degrees until browned, about 35 minutes. Let stand 5 to 10 minutes before slicing. Makes 8 servings.
