OATMEAL CUPCAKES 
1 c. oatmeal, cooked, cooled
1 c. brown sugar
2 eggs, beaten
1 tsp. nutmeg
1 tsp. vanilla
3/4 c. brown sugar
1 c. nuts, chopped
3 tbsp. milk
1/2 c. butter
1 c. white sugar
1 1/3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 c. coconut
1 egg
3 tbsp. butter, melted

Cream 1/2 cup butter, 1 cup each brown and white sugar, together. Add beaten eggs, and vanilla. Sift dry ingredients. Alternate dry ingredients with oatmeal mixture. Put in 24 cupcake liners or a 9 x 13 inch cake pan. Then mix a topping by mixing; 3/4 cup brown sugar, coconut, nuts, egg, milk, melted butter. Drop on cupcake top by teaspoonfuls. Use the same method for the cake pan. Bake 25 minutes for cupcakes or 40 minutes for cake at 350 degrees. Makes 24.
