HAM & CHEESE POTATO BAKE 
4 lg. Idaho potatoes, baked
1 c. shredded cheddar cheese
1 c. diced, cooked ham
2 scallions, thinly sliced
1 med. green pepper, chopped
4 tbsp. butter, softened
1 c. sour cream
Salt & pepper

Saute onion and green pepper for 1 to 2 minutes. Cut each potato in half, lengthwise and remove some of pulp and place in a mixing bowl. Add all of the onion, pepper sauteed and butter; mix well. Add cheese and sour cream and beat all well. Add salt, pepper and diced ham and blend in. Spoon mixture into halved potato shells. Place stuffed shells in a small baking pan and broil for a few minutes to heat and golden brown surface. Serves 4.
