CHILE QUICHE 
1 1/2 c. Jack cheese, grated
1 1/2 c. Cheddar cheese, grated
1 (4 oz.) can diced green chilies
1 c. half & half
3 eggs, slightly beaten
1/4 tsp. cumin
1 tsp. salt
1 (9-inch) deep dish frozen pie crust

Sprinkle all of Jack cheese and half of Cheddar cheese on bottom of pie crust. Place sliced chilies on top of cheese. Blend together eggs, half & half, cumin and salt and pour over chilies. Sprinkle top with rest of Cheddar cheese. Bake at 375 degrees for 1 hour.
