MICROWAVE GINGER APPLESAUCE 
3 lb. apples, washed
1/4 c. apple cider
1/3 c. sugar
1 tbsp. minced candied ginger
1/4 tsp. ground ginger
1 pt. vanilla ice cream; optional

Core apples. Do not peel. Cut into eighths. Combine prepared apples and cider in a 3 quart micro-safe glass bowl. Microwave, covered, at HIGH power for 7 minutes. Stir. Microwave, covered, for another 5-7 minutes. Let stand, covered, 5 minutes. Puree through food mill. Stir in sugar, candied ginger and ground ginger. Serve warm with ice cream or chilled as a snack or as a condiment to meat or poultry dishes. Makes 4 (4 cup) servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
