CINNAMON APPLESAUCE 
3 red delicious apples (peeled)
1 tbsp. packed brown sugar
ground cinnamon, for sprinkling

Slice the apples off the core in fairly large pieces (about 8). Discard the core. Place the slices into a medium microwave safe bowl. Sprinkle with sugar and cinnamon. Cover the bowl with plastic wrap and microwave on high (100%) for 5 minutes.

Using oven mitts, remove bowl from oven to a hot pad.Slowly fold back the plastic wrap with care. Stir. Cover again and microwave on high for another 5 minutes.

Remove to hot pad once more. Let cool for 15 minutes. Then mash the mixture with a potato masher until smooth and chunky consistency.

Makes 1 2/3 cups (400 ml).
