CHEESECAKE #3 
Mix together 3 packages of cream cheese, any brand, with the yolks of 3 eggs, 1 (8 ounce) carton of sour cream, 1/2 cup of sugar, lemon juice to taste. Mix until smooth. Then whip the 3 egg whites, pretty much until stiff (not quite), at least frothy, and fold into the rest.

Pour into a 10-inch springform pan, whoops - on top of a graham cracker crust you made by simply combining graham cracker crumbs, butter, and sugar and press into springform pan.

Bake at about 375 degrees for 45 minutes. Turn down oven to 325 degrees and bake remainder of time, about an hour (keep checking). Turn oven off and leave cheesecake in oven for the rest of the night until morning!! No joke!

To serve, add any topping - fresh strawberries, blueberries, can of cherries, etc. You'll think you died and went to Heaven!!
