ITALIAN BEEF STEW (Venison) 
2 lbs. beef (venison)
4 tbsp. cooking oil
2/3 c. beef broth
1/2 c. water
1 (8 oz.) can tomato sauce
1 pkg. Italian dressing mix
2/3 c. chopped onion
2/3 c. chopped green pepper
2/3 c. chopped celery
6 med. potatoes
2 or 3 carrots

Mix: 2 tbsp. water

Brown beef chunks in oil. Add all ingredients except vegetables and the flour and water. Bring to a boil and simmer (covered) 1 1/4 hours. Add chopped and chunked vegetables. Cook 1 hour. Add flour and water mix. Cook 10 minutes.
