MEAT - STUFFED MANICOTTI 
8 manicotti shells
2 tbsp. olive oil
1/2 lb. fresh spinach, washed, dried & finely chopped
2 tbsp. chopped onion
1/2 tsp. salt
1/2 tsp. oregano
1/2 lb. ground beef
2 tbsp. fine dry bread crumbs
1 egg, slightly beaten
2 tbsp. tomato paste
1 1/2 tbsp. butter, softened
Grated Parmesan or Romano cheese

Cook manicotti until tender in water, drain. Put olive oil into a glass baking dish; add spinach, onion, salt, oregano and meat. Mix well, separating meat into small pieces. Cook uncovered in microwave oven until meat is no longer pink, stirring occasionally. Remove from oven, set aside to cool slightly.

Add bread crumbs, egg and tomato paste, mix well. Stuff manicotti with mixture. Put side by side in a greased 2 quart glass baking dish. Spread butter over stuffed manicotti and sprinkle with cheese. Cover with waxed paper and cook in microwave oven until thoroughly heated. Rearrange manicotti after 2 minutes. If desired, serve topped with tomato sauce and additional cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
