BAKED ZUCCHINI 
2 c. raw zucchini, thinly sliced
1/2 c. precooked rice (Minute rice)
1/4 c. onion
1/2 tsp. salt
3/4 c. boiling water
3 eggs, beaten
1/2 c. milk
1 c. cheese, grated

Combine zucchini, rice, onion, and salt in pan. Add water, cover and cook 15 minutes in microwave. Add eggs, milk and cheese. Pour into casserole. Bake 40 minutes or until set. (Insert knife, knife comes out clean.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
