TABBOULEH (Cracked Wheat Salad) | |
1 1/2 c. fine cracked wheat (burguhl) 1 lg. bunch parsley, chopped fine 1 bunch green onions, chopped fine 1 lg. onion, chopped fine 4 lg. red tomatoes, chopped 1/2 c. frozen lemon juice 1/2 c. salad oil 1 tsp. black pepper 1 tsp. salt Rinse wheat several times in cold water and drain in sieve to remove excess water. Set aside 2 to 3 hours in refrigerator. Add rest of ingredients to wheat - mix well. Add seasoning to taste. Let set overnight before serving. Serve with crisp lettuce leaves. Serves 8 to 10. |
