CREAMY TURKEY STEW 
3 c. diced, cooked turkey
2 tbsp. butter
1 med. onion, minced
1/2 med. chopped green pepper
1 tsp. ground cumin or chili powder to taste
1/4 tsp. nutmeg
1 can tomato paste
3/4 c. chunky peanut butter
3 c. turkey or chicken broth
1 sm. dried hot chili pepper

Two medium turkey drumsticks will yield 3 cups cooked meat and 3 cups broth for later use.

Melt butter in Dutch oven and add onion and green pepper. Cook until onion is tender. Stir in cumin or chili powder, tomato paste, peanut butter and broth and mix well. Remove seed from chili pepper and crumble pepper; add it and nutmeg and turkey to mix. Cook over low heat until heated through, stirring occasionally. Serves 4.
