OATMEAL PANCAKES 
2 c. milk
1 1/2 c. instant oatmeal
1 c. flour
2 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs, beaten
1/3 c. vegetable oil

Pour milk over oats; let stand. Mix together flour, baking powder, salt, and sugar. Stir eggs into oatmeal-milk mixture. Add the dry ingredients. Stir in oil. Bake on hot, lightly greased, griddle. Serve with syrup, jam, or applesauce.
