LEMON CHICKEN AND MUSHROOM SALAD 
2 chicken breasts
1/4 to 1/3 c. lemon juice
1 lb. fresh mushrooms, sliced
1/4 tsp. grated lemon peel
Salt and pepper

Cut chicken into bite-size cubes. Combine chicken with lemon juice and marinate 30 minutes.

Combine chicken, juice, mushrooms, lemon peel, salt, and pepper in large non- stick skillet. Cover tightly and simmer for 10 minutes; stir occasionally. Chill until ready to eat. Serve on bed of lettuce, adding cherry tomatoes for color. Makes 6 servings at about 110 calories each.
