CHEESY CHICKEN ROLL-UPS 
1 tsp. minced onion
2 c. cut up chicken
1 1/2 c. grated cheese
1 sm. sour cream
1/2 tsp. salt
1/4 tsp. pepper
1 can buttermilk (8-10) biscuits
1 can mushroom soup
1/2 soup can milk

Preheat oven to 450 degrees. Mix onion, butter, chicken, cheese (1 cup), sour cream, salt and pepper; mix well. Roll biscuits out thin, add 1 spoonful of meat mixture and roll over and seal edges well, place in 9"x13" pan. Repeat process until finished with biscuits. There should be meat filling left over. Bake biscuits at 450 degrees until brown. While baking mix soup and milk and heat. When roll-ups are brown, remove and pour soup mix over top of them. Sprinkle with cheese. Return to oven to melt cheese and serve. (Also good using ham, tuna and shrimp.)
