BAKED FRUIT 
1 c. brown sugar
16 oz. can sliced cling peaches
16 oz. can dark pitted cherries
16 oz. can apricots
20 oz. can sliced pineapple
1 1/2 c. rum
1/2 tsp. curry powder, optional
Sour cream, optional

Drain all juices except apricot juice. Combine all fruit, brown sugar, 1 cup rum, apricot juice and curry if desired, in a 9x13 casserole dish. Cook for 1 hour at 350 degrees. Pour remaining rum on top and cook for 10 more minutes. Top with dollop of sour cream if desired. Serves 16.
