1 env. (4 serving size) low calorie lemon gelatin 1 c. boiling water 1 c. cold water 2 tsp. lemon juice 1/2 tsp. grated lemon rind Dash of salt, optional 2 egg whites Dissolve gelatin in boiling water. Add cold water, lemon juice, lemon rind, and salt. Chill until slightly thickened; beat with electric mixer until fluffy, thick, and about double in volume. Beat egg whites until they form soft rounded peaks; fold into whipped gelatin. Pour into 6 cup mold. Chill until firm, about 4 hours. Unmold. Serve plain, with fresh fruit or a custard sauce, if desired. Yield: 8 servings. Calories: 10 per serving. |
