VEGETABLE BAKE 
10 oz. chopped spinach
4 oz. shredded Swiss cheese
4 oz. shredded mozzarella cheese
2 tbsp. flour
1/3 c. milk
3 eggs
1/4 c. diced onions
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme
1/4 tsp. crushed rosemary
1/8 tsp. hot sauce

Cook spinach. Drain well. Combine cheese and flour and dry seasoning. Beat eggs and pour milk into egg mixture. Add vegetables, cheese, flour and seasoning to the eggs and milk and pour into an unbaked pie shell. Bake on a cookie sheet 50 minutes or until set in a 350 degree oven. Let set before cutting.

May substitute asparagus or zucchini or another vegetable of your choice.
