TUNA-RICE SALAD 
1 (6 1/2 oz.) can tuna
2 c. cooked rice
1 c. peas, cooked
1/2 c. low-fat Swiss cheese
2 tbsp. chopped fresh parsley
1/2 c. fat free mayonnaise
1/2 tsp. dry mustard
1/2 tsp. wine vinegar
1/4 tsp. pepper
Leaf lettuce

Drain tuna; place in medium bowl. Add rice, peas, cheese and parsley. In a small bowl, blend mayonnaise, mustard, vinegar and pepper. Pour over tuna mixture tossing gently to mix well. Serve on bed of lettuce. Serves 4 (1 cup) servings.
