BANANA - WALNUT BARS 
2 tbsp. dry yeast
1/4 c. warm water
1 1/2 c. honey
1 c. oil
4 eggs
2 tsp. vanilla
2 c. ripe bananas, mashed
3 c. whole wheat flour
1/4 c. soy flour
2 c. walnuts, broken

Soften yeast in water with honey and oil, blending thoroughly. Allow the mixture to bubble. Add eggs, one at a time, beating well. Add the remaining ingredients and mix well. Turn into 3 greased pans, 8 x 8 x 2 inches, and set aside for 1 1/2 to 2 hours until the batter has risen almost double in bulk. Bake at 350 degrees for 30 to 35 minutes. Allow it to cool, then cut into 1 x 4 inch bars. Yield: 4 dozen bars.
